Crisp seasonal garden leaves and fresh vegetables tossed in a vibrant house dressing, finished with toasted seeds and fresh herbs.
Finely shred the cabbage, seed and slice the cucumber, and thinly slice the shallots.
Fry the minced pork in a hot pan, breaking it up until golden and cooked through, then cool slightly.
Whisk the fish sauce, lime juice, and sugar with 2 tbsp water until dissolved, and stir in the chili.
Combine the warm pork, cabbage, cucumber, and shallots, pour over the dressing, and toss well.
Leave for 5 minutes so the pork soaks up the dressing.
Scatter with the crushed peanuts and serve.
