Chef's Menu Description

A distinguished culinary classic crafted with authentic techniques and finest ingredients, offering rich depth of flavour and elegant presentation.

Ingredients

  • • 2 medium bananas
  • • 100 ml low-fat double cream alternative
  • • 200 g fat-free Greek yoghurt
  • • 1 meringue nest ((approx. 180g, crumbled))
  • • 4 tsp toffee flavour dessert topping

Preparation Steps

1
Phase 1

Peel the bananas. Add one to a bowl and mash well with a fork until you have a chunky puree. Slice the other banana and leave to one side.

2
Phase 2

Place the low-fat double cream alternative in a mixing bowl. Whisk with an electric hand whisk — on high speed — for about two minutes, until soft peaks are formed. Take care not to over-whisk the cream alternative otherwise it will become too stiff to fold in the remaining ingredients.

3
Phase 3

Add the yoghurt and banana puree to the bowl with the whipped cream alternative. Using a rubber spatula or large metal spoon, fold in gently until completely combined. Take care not to knock the air out of the mixture.

4
Phase 4

Add a little of the banana cream mixture to the bottom of 4 serving dishes. Top each with some of the banana slices, some meringue and 1/2 tsp toffee dessert topping. Repeat with the remaining banana cream, banana slices, and meringue. Drizzle the rest of the dessert topping over the top and serve.
