Chargrilled over glowing charcoal embers with an authentic smoky char, served with handcrafted accompaniments and savoury reductions.

Ingredients

  • • 260 g diced chicken breast
  • • 1 orange, (zested and juiced)
  • • 1 tsp lime juice
  • • 1/2 red chilli, (deseeded and finely diced)
  • • 2 garlic cloves, (peeled and crushed)
  • • 2 cm ginger, (peeled and finely grated)
  • • 2 tbsp honey
  • • 1 tbsp soy sauce
  • • 1/2 tbsp rice vinegar
  • • 1/2 tsp onion granules
  • • 1/4 tsp sriracha sauce
  • • 1 spring onion, (finely diced)
  • • 2 peppers, (deseeded and chopped into chunks)
  • • 24 cherry tomatoes
  • • low-calorie cooking spray

Preparation Steps

1
Phase 1

In a bowl, add the marinade ingredients and stir to combine. Add the diced chicken and stir to coat. Cover and pop into the fridge overnight.

2
Phase 2

Preheat the air fryer to 180ºC. Spray the air fryer basket with low-calorie cooking spray and soak the bamboo skewers in water.

3
Phase 3

Once the chicken has marinated, thread the chicken, peppers and tomatoes onto 8 skewers in any order you like.

4
Phase 4

Place the 8 skewers into the air fryer basket and cook for 10-15 minutes, until the chicken is cooked through. You may need to do this in batches depending on the size of your air fryer. Serve 2 chicken kebabs per portion with your choice of accompaniment.
