Crisp seasonal garden leaves and fresh vegetables tossed in a vibrant house dressing, finished with toasted seeds and fresh herbs.
Knead the flour, yeast, warm water, 2 tbsp of the olive oil, and 1/2 tsp of the salt into a soft dough; rest 1 hour until doubled.
Sauté the onion in the remaining oil, then add the spinach and cook until wilted; drain well.
Season the spinach with the sumac, lemon juice, and remaining salt; cool completely.
Roll the dough thin, cut circles, fill, and fold into triangles, pinching the seams shut.
Bake at 200C for 15-18 minutes until golden.
Serve warm or at room temperature as part of a mezze spread.
