Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Mix the grated cheese, ricotta, and parsley.
Layer 3 phyllo sheets, brushing each with melted butter, and cut into 6cm strips.
Place a teaspoon of filling at one end of each strip and roll into a tight cigar, sealing the edge with the egg wash.
Rest the rolls 15 minutes in the refrigerator so they hold their shape.
Brush with butter, sprinkle with sesame seeds, and bake at 190C for 15-18 minutes until golden.
Serve the cheese rolls hot as part of a mezze spread.
