Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Blitz the coriander, garlic, chili, cumin, half the olive oil, and lemon juice into a coarse paste.
Slash the fish three times on each side and rub it inside and out with the paste and salt.
Marinate 30 minutes so the flavours penetrate the flesh.
Roast at 200C for 20-25 minutes until the flesh flakes easily.
Drizzle with the remaining olive oil, scatter extra coriander, and serve warm or at room temperature with bread.
