Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, water, 1 tbsp of the oil, and 1/2 tsp of the salt into a soft dough. Rise, covered, 1 hour.
Rub the spinach and onions with the remaining salt until wilted, then squeeze out the liquid. Dress with the sumac, lemon juice, and remaining oil.
Divide the dough into 12 balls and roll each into a 10cm oval.
Place a spoonful of filling in the centre and fold into a tight triangle, sealing the seams firmly.
Bake at 200C for 15 to 18 minutes until lightly golden.
Cool briefly and serve the fatayer warm or at room temperature.
