Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, water, olive oil, sugar, and salt for 8 to 10 minutes into a smooth, supple dough.
Cover and let rise in a warm place for about 1 hour, until doubled.
Divide into 8 balls and rest, covered, for 15 minutes.
Roll each ball into a 15cm round about 5mm thick. Rest 10 minutes more, uncovered, so the surface dries slightly.
Bake on a preheated stone or upturned tray at 250C for 2 to 3 minutes until they balloon and spot with colour.
Wrap the hot pitas in a clean towel to keep them soft, then split them for scooping mezze.
