Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Rinse and simmer the basmati in salted water for 8 minutes, then drain.
Brown the lamb and onion, seasoning with the allspice and salt. Add the peas and pine nuts, cook 2 minutes, then fold in the rice. Cool completely.
Cut each pastry sheet in half, place a spoonful of filling along one edge, and roll into tight fingers, sealing the final edge with water.
Deep-fry at 180C in batches for 2 to 3 minutes until crisp and golden.
Drain on paper and serve the parcels hot with garlic yogurt.
