Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Simmer the lentils in plenty of water for 12 minutes. Drain, reserving a cup of the liquid.
Fry two-thirds of the onions in the oil over medium-low heat until deeply browned and crisp, 20 to 25 minutes. Drain on paper.
Return 2 tbsp of the frying oil to the pot, add the rice, cumin, and salt, and stir 1 minute. Add the lentils and 350ml water, cover, and cook 18 minutes on low.
Remove from the heat and let the pot stand covered for 10 minutes, then fluff with a fork.
Mound onto a plate, crown with the crispy onions, and serve with the yogurt.
