Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, water, 2 tbsp oil, and 1/2 tsp of the salt into a smooth dough. Rest 30 minutes under a damp towel.
Fry the lamb and grated onion over high heat until browned, about 6 minutes. Season with the cumin, coriander, turmeric, and remaining salt, then cool.
Roll the dough thin, cut 8cm circles, and fold each around a spoonful of filling into crescents. Press the edges with a fork to seal.
Deep-fry at 180C until deep golden, about 3 minutes per batch.
Drain and serve hot with zhug on the side.
