Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Boil the whole aubergines for 10 minutes until just tender but still holding their shape.
Slit each aubergine lengthwise, rub with the coarse salt, and stand them slit-side down on a rack weighted with a plate. Drain overnight in the fridge.
Mix the walnuts, garlic, and chilies, then pack the filling firmly into each slit.
Place the aubergines snugly in sterilized jars and pour in olive oil to cover completely, pressing out air pockets.
Seal and store in a cool, dark place for 5 to 7 days before serving with bread.
