Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, water, oil, and 1/2 tsp of the salt for 10 minutes into a smooth, elastic dough. Rest 1 hour.
Brown the lamb with the onion, cumin, pepper, and remaining salt. Cool slightly, then stir in the beaten eggs.
Divide the dough into 4 balls and roll each paper-thin into a large square on an oiled surface.
Spread a quarter of the filling over each sheet, fold into a square packet, and pan-fry in a lightly oiled frying pan until crisp and golden on both sides.
Cut each into squares and serve hot.
