Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Combine the flour, water, oil, and 1/2 tsp of the salt into a firm dough. Knead 8 minutes and rest 30 minutes under a towel.
Saute the onion in a little oil until soft, then stir in the chicken, baharat, loomi, and turmeric. Cook 3 minutes and cool completely.
Roll the dough thinly and cut 9cm rounds. Place a teaspoon of filling on each, fold into triangles, and pinch the seams shut.
Shallow-fry in 1cm of hot oil until blistered and golden on both sides.
Drain well and serve hot as a Gulf-style starter.
