Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, warm water, yeast, and 1 tsp salt into a soft dough and let it rise for 1 hour.
Pound the lamb with the onion, tomatoes, pepper paste, cumin, and salt in a food processor until it forms a smooth paste.
Divide the dough into 8 balls and roll each into a very thin 20cm round.
Spread the lamb paste over each round in a thin, even layer with your fingers.
Bake at the highest oven setting for 5-7 minutes until the edges are crisp and spotted.
Serve hot with lemon wedges, parsley leaves, and sumac-sliced onion.
