Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Slit the aubergines lengthways, salt them lightly, and fry in half the olive oil until the skin wrinkles and the flesh softens.
Cook the onions and garlic very gently in the remaining oil until translucent, about 10 minutes.
Mix the onions with the diced tomato, most of the parsley, the sugar, and the salt, then pack the mixture into the aubergine slits.
Lay the aubergines in a pan with the tomato slices on top and a splash of water, cover, and cook over the lowest heat for 45 minutes.
Cool completely and serve at room temperature scattered with the remaining parsley and a drizzle of oil.
