Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Rinse the bulgur, soak in cold water for 15 minutes, and squeeze out the moisture.
Knead 300g of the lamb with the bulgur, half the grated onion, the cinnamon, allspice, and salt into a smooth paste, then chill.
Brown the remaining lamb and onion in the butter with the pine nuts, then cool.
With wet hands, form the paste into ovals, hollow them, enclose a spoonful of filling, and close into torpedo shapes.
Refrigerate the kibbeh for 20 minutes to firm up.
Deep-fry at 180C until deep golden brown and drain on kitchen roll.
Serve warm with yogurt or tahini sauce.
