Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, sugar, salt, 3 tbsp olive oil, and warm water into a soft dough and let rise 1 hour.
Sauté the onion in 2 tbsp olive oil, wilt in the spinach, and stir through the sumac; cool and squeeze dry.
Divide the dough into 12 pieces and roll each into a 10 cm round.
Place a spoonful of filling on each round and pinch the edges into an open triangle.
Cover the shaped pastries and rest 15 minutes.
Bake at 200C for 12 to 15 minutes until golden and serve warm.
