Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, sugar, salt, 2 tbsp olive oil, and warm water for 8 minutes, then let rise 1 hour.
Divide into 8 balls and rest 10 minutes under a towel.
Flatten each ball on an oiled tray into a 12 cm round and dimple the centre with fingertips.
Stir the za'atar into the remaining olive oil and spread generously over each round.
Bake at 220C for 8 to 10 minutes until the edges are golden.
Serve warm or at room temperature, cut into wedges.
