Layers of crisp golden filo pastry or delicate semolina cake, soaked in aromatic orange blossom honey syrup and crowned with crushed pistachios.
Rub the melted butter into the semolina until fully coated, rest for 15 minutes, then knead with the warm milk and sugar into a soft, smooth dough.
Knead the pitted dates with the cinnamon and the extra butter into a smooth paste.
Divide the dough and date paste into equal balls.
Flatten each dough ball, enclose a date ball, and press into a decorative ma'moul mold or flatten with a fork.
Bake at 180C for about 20 minutes until the bottoms are lightly golden but the tops stay pale.
Cool completely and dust generously with icing sugar.
