Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Blend the flour, semolina, yeast, the first sugar, and the warm milk into a smooth, pourable batter; rest for 30 minutes until bubbly.
Drop ladlefuls of batter onto a hot nonstick pan and cook until the tops dry and bubble, leaving one side pale; do not flip.
While still pliable, fill each disc with shredded string cheese and fold into a half-moon, pinching the edge to seal.
Boil the syrup sugar, water, and lemon juice for 10 minutes and keep it warm.
Deep-fry or bake the filled katayef at 190C until crisp and golden.
Dip the hot katayef briefly in the warm syrup and serve at once.
