Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, sugar, oil, warm water, and salt into a soft dough; rest covered for 1 hour until doubled.
Melt the dates with the butter and cinnamon over low heat, mashing into a smooth paste; cool.
Divide the dough into balls, roll each into a thin disc, and place a spoonful of date paste in the centre.
Fold the three sides over the filling to form a triangle, pinching the seams tightly shut.
Rest the fatayer 20 minutes, then bake at 190C for 15-18 minutes until lightly golden.
Brush with melted butter while warm and dust with icing sugar when cool.
