Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Whisk the flour, cornflour, yeast, tablespoon of sugar, and warm water into a thick batter; cover and rise 1 hour until bubbly.
Simmer the 1 1/2 cups sugar with the 1/2 cup water and lemon juice for 10 minutes; keep warm.
Heat the oil to 180C and drop rounded teaspoons of batter in, a few at a time; fry until golden and puffed.
Lift the fritters out with a slotted spoon and drain on paper.
Soak the hot fritters in the warm syrup for 10-15 minutes and serve scattered with crushed pistachios.
