Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, egg, warm milk, and a pinch of salt into a soft dough and rest for 1 hour until doubled.
Divide into 6 balls and roll each as thin as a sheet of paper on a floured surface.
Stack the sheets in a buttered round pan, brushing each generously with melted ghee and keeping the final sheet slightly thicker to seal the top.
Bake at 200C for 20 to 25 minutes until puffed and deep golden.
Brush the hot pastry with the remaining ghee, sprinkle the nigella seeds over, and pour the warm honey across the top.
Rest for 5 minutes, then pull the layers apart by hand and serve warm.
