Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Whisk the flour, yeast, the first sugar, yogurt, the first measure of water, and salt into a thick, sticky batter.
Cover and rest in a warm place for about 1 hour until bubbly and doubled.
Boil the syrup sugar, the second measure of water, and the lemon juice for 15 minutes into a medium syrup and keep it hot but off the boil.
Heat oil to 180C and drop teaspoonfuls of batter in; fry in batches, turning, until deep golden, then drain.
Drop the hot fritters into the warm syrup for a few seconds so they drink some sweetness without going soggy.
Pile onto a serving plate and eat warm.
