Tender orchard fruits baked beneath a golden, crisp butter and oat crumble, served warm with velvety Madagascan vanilla custard or double cream.
Whisk the flour, cornflour, yeast, sugar, and warm water into a thick batter and rest for 1 hour until frothy.
Drop walnut-sized spoonfuls into oil heated to 180C, a few at a time, and fry until deep golden.
Lift out with a slotted spoon and drain briefly on paper.
Drizzle generously with the date syrup while still hot.
Sprinkle with sesame seeds and eat warm and crisp.
