Ingredients

  • • 2 cups fine semolina
  • • 1 cup plain yogurt
  • • 3/4 cup sugar
  • • 100g unsalted butter, melted
  • • 1 tsp baking powder
  • • 1 cup sugar
  • • 1/2 cup water
  • • 1 tbsp lemon juice
  • • 1 tbsp orange blossom water

Preparation Steps

1
Phase 1

Simmer the sugar, water, and lemon juice for 8 minutes into a light syrup; cool and add the orange blossom water.

2
Phase 2

Mix the semolina, yogurt, sugar, melted butter, and baking powder into a thick batter.

3
Phase 3

Let the batter rest for 30 minutes so the semolina swells.

4
Phase 4

Spread in a buttered tray, score into diamonds, and bake at 180C for 30-35 minutes until golden.

5
Phase 5

Pour the cold syrup over the hot basbousa and let it absorb before serving.
