Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, salt, and warm water into a very soft dough; rest 1 hour under an oiled cover until relaxed and pillowy.
Portion into 8 balls, coat with a little ghee, and rest 15 minutes.
Roll each ball on an oiled surface into a thin round about 25 cm across.
Lay each round on a hot tawa over medium-high heat and cook 1-2 minutes per side until it puffs and takes golden blisters.
Brush each malooga generously with melted ghee as it comes off the pan.
Stack under a towel and serve warm, torn and used to scoop zurbian.
