Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, sugar, salt, warm water, and 3 tbsp of the oil into a soft dough; prove 1 hour until doubled.
Char the aubergines until collapsed, peel, and chop the flesh; mix with the garlic, tomato paste, remaining oil, and a pinch of salt.
Divide the dough into 12 balls and roll each into a thin 12 cm circle on an oiled surface.
Place a spoonful of aubergine filling on each round and fold three sides over into a triangle, pinching the corners to seal.
Rest the pastries 15 minutes on a lined tray.
Bake at 200C for 12-15 minutes until golden and serve the fatayer warm.
