Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Beat the butter with the icing sugar until pale and fluffy, then beat in the egg yolk.
Sift the flour with the mahlep and baking powder and fold into the butter mixture to a soft dough.
Rest the dough 30 minutes in the refrigerator until firm enough to handle.
Roll small spoonfuls into balls and set them 3 cm apart on a lined tray, flattening lightly.
Bake at 170C for 15 minutes until set and barely coloured on the bottom; they must stay pale on top.
Cool completely until they crumble and melt, and serve the kurabiye beside small cups of Turkish coffee.
