Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead both flours with the bran, yeast, salt, and warm water for 10 minutes into a moist, elastic dough; prove 1 hour until doubled.
Divide into 6 balls and flatten each into a thick 12 cm disc, keeping the edges slightly higher than the middle.
Rest the discs on floured trays for 20 minutes until puffy.
Bake at 250C on a preheated tray or stone for 4-5 minutes until they puff into pocket loaves and blush with colour.
Wrap immediately in a cloth so the crusts soften.
Split the warm baladi bread and stuff with mezze and torshi pickles.
