Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, sugar, salt, warm milk, oil, and half the egg into a soft dough; prove 1 hour until doubled.
Divide into 12 balls and let them rest 10 minutes under a towel.
Flatten each ball, place a spoonful of diced sujuk in the centre, gather the edges to seal, and set seam-side down.
Gently flatten each filled ball into a plump bun on a lined tray.
Brush the tops with the remaining beaten egg and sprinkle with nigella seeds.
Bake at 190C for 15-18 minutes until golden and cooked through; serve the poğaça warm.
