Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the beef, grated onion, garlic, cumin, paprika, cinnamon, and salt together until well blended.
Slit each pita to form a pocket and press a thin layer of the spiced beef mixture inside both walls of the bread.
Brush the outside of each stuffed pita with olive oil and place on a hot griddle over medium heat.
Cook 4-5 minutes per side, pressing flat with a spatula, until the meat is cooked through and the bread is crisp and charred in spots.
Cut into wedges and serve the arayes hot with pickles and garlic sauce.
