Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Mix the semolina with the melted butter, cover, and let it rest 1 hour so the semolina drinks in the butter.
Dissolve the yeast and sugar in the rose water and warm water, work into the semolina to form a soft dough, and rest 30 minutes.
Knead the chopped dates with the cinnamon into a smooth paste and roll into small balls.
Enclose a date ball in each piece of dough, seal completely, then flatten and press in a carved maamoul mold or with a fork.
Bake at 190C for 12-15 minutes until barely golden on the bottom, keeping the tops pale.
Dust generously with icing sugar once cool and serve with rose-scented tea.
