Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, sugar, salt, warm water, and olive oil for 10 minutes into a smooth, elastic dough; prove 1 hour.
Cut into 8 balls, shape tightly, and rest under a towel for 15 minutes.
Flatten each ball and roll to 6 mm thickness; rest the rounds 10 minutes until slightly puffed.
Slide onto a preheated baking stone or hot upturned tray at 250C and bake 2-3 minutes until they balloon and lightly spot.
Wrap the pitas immediately in a towel so they stay soft and pocketed inside.
Serve warm, torn for scooping up shakshuka.
