Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, salt, warm water, and 3 tbsp of the oil into a soft dough; prove 1 hour until doubled.
Mix the lamb, onions, tomatoes, allspice, and 1 tsp salt in a bowl until well combined.
Divide the dough into 12 balls and roll each into a thin 10 cm round on an oiled surface.
Spread a thin layer of the lamb topping over each round, then pinch and crimp the edges upward to form a small open boat.
Bake at 230C on a preheated tray for 10-12 minutes until the meat is cooked and the pastry edges are crisp and golden.
Brush the hot pies with the remaining olive oil and serve warm with lemon wedges.
