Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, salt, warm water, and 2 tbsp oil into a smooth dough; rest 30 minutes under a towel.
Fry the onion and garlic in a little oil until soft, then add the cumin and coriander and stir 1 minute.
Add the flaked fish and toss gently until the mixture is dry and fragrant; season with salt and cool completely.
Roll the dough very thin and cut 10 cm circles; place a spoonful of filling on each, fold into half-moons, and press the edges to seal with a flour-water paste.
Deep-fry at 180C in batches until crisp and deep golden, about 3 minutes per batch.
Drain on kitchen roll and serve the pastries hot.
