Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, 1 tsp of the salt, 2 tbsp of the oil, and the water into a soft dough; prove 1 hour.
Squeeze the spinach dry, then mix with the onion, sumac, the remaining oil, and the remaining salt.
Roll walnut-size pieces of dough into thin circles; cup in the hand, fill, and pinch closed into triangles.
Rest 15 minutes, then bake at 200C for 15-18 minutes until golden.
Eat warm or at room temperature.
