Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flours, yeast, salt, and water into a soft dough for 10 minutes.
Cover and prove about 1 hour, until doubled.
Divide into 8 balls; flatten each into a round 1 1/2 cm thick, pressing the centre thinner so a puffy rim remains.
Dust the tops with wheat bran and rest 20 minutes.
Bake at 240C for 6-8 minutes until puffed into two layers with golden spots.
Split and fill or serve warm alongside the lentil and rice dish.
