Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flours, yeast, salt, oil, and water for 10 minutes into a smooth, soft dough.
Divide into 10 balls, coat lightly with oil, and rest 30 minutes.
Roll each ball paper-thin into rounds about 40 cm across on a lightly floured surface.
Lay each round on a hot saj or convex griddle and cook 30-45 seconds per side until lightly spotted.
Stack under a cloth to keep them pliable and serve in place of rice with the spiced dish.
