Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, sugar, mahlab, salt, oil, and water into a smooth soft dough for 10 minutes.
Cover and prove about 1 hour, until doubled.
Rinse the akkawi sticks in cold water to remove excess salt and pat dry.
Flatten a piece of dough around a cheese stick, roll into a rope, pinch the seam closed, and form into a ring.
Bake at 200C for 15-18 minutes until the rings are golden and the cheese has melted.
Eat warm, while the white cheese centre is still stretchy.
