Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Combine the flour, yeast, sugar, and salt; add the yogurt and water, then knead 10 minutes into a soft dough.
Cover and prove 1 to 1 1/2 hours, until doubled.
Divide into 6-8 balls and roll each into a round about 1 cm thick.
Cook on a dry hot cast-iron pan or saj over medium-high heat, 3-4 minutes per side, flipping twice, until golden spots form.
Stack under a cloth to stay soft and serve warm in place of the classic accompaniment to the sultan's purée.
