Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flours, yeast, sugar, salt, water, and olive oil into a soft dough for 10 minutes.
Cover and prove about 1 hour, until doubled in size.
Divide into 2 rounds, flatten to 2 cm thick, and score a shallow cross on top with a sharp knife.
Let the rounds relax 20 minutes on a cornmeal-dusted tray.
Bake at 220C for 20-25 minutes until deep golden and hollow-sounding when tapped.
Cool slightly on a rack and serve warm alongside harira soup.
