Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, sugar, salt, warm water, yogurt, and 1 tbsp butter into a soft dough; prove for 1 1/2 hours until doubled.
Divide into 8 balls; rest for 15 minutes, then roll each into a 1cm-thick round.
Press dimples across the surface of each round with your fingertips.
Rest, covered, for 20 minutes until slightly puffed.
Brush with the remaining butter, sprinkle with sesame seeds, and bake on a preheated tray at 220C for 8-10 minutes until golden.
Serve warm for scooping up ghormeh sabzi.
