Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Rub the flour with 1/2 cup olive oil and the salt, then add just enough warm water to form a firm dough; rest for 30 minutes.
Combine the rice, pine nuts, parsley, dill, currants, the remaining 2 tbsp olive oil, and a pinch of salt.
Roll the dough thin and cut into 8cm rounds; place a spoonful of filling on each.
Fold each round into a half-moon and crimp the edge firmly with a fork to seal.
Bake on parchment-lined trays at 190C for 18-20 minutes until golden; serve warm or at room temperature.
