Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Beat the butter and sugar until pale; beat in the egg, then work in the flour, semolina, and baking powder into a soft dough. Chill for 30 minutes.
Stir the honey with 1 tbsp water in a shallow plate; spread the sesame seeds in another plate.
Spread the chopped pistachios on a third plate.
Roll the dough into 24 small balls; dip each ball first in the honey water, then press one side into the sesame seeds and the other into the pistachios, flattening into 6cm discs.
Bake on parchment-lined trays at 180C for 12-15 minutes until the edges are golden.
Cool completely on a rack until crisp.
