Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, sugar, salt, warm water, and 1 tbsp olive oil into a smooth dough; prove for 1 hour.
Divide into 8 balls and roll each into a 15cm round.
Rest the rounds, covered, for 15 minutes until slightly puffed.
Bake on a preheated tray at 250C for 4-6 minutes until each bread balloons and lightly browns.
Brush the warm pitas with olive oil, sprinkle with za'atar and sesame seeds, and serve for scooping smoky baba ganoush.
