Flaky, all-butter golden pastry filled with a delicately spiced sweet filling, baked until crisp and aromatic.
Knead the flour, yeast, sugar, 1 tsp salt, and warm water into a smooth dough; prove for 1 hour.
Prick and roast the aubergines under a hot grill until collapsed and smoky; scoop out the flesh, drain, and mash with the yogurt, garlic, and 1/2 tsp salt.
Brown the lamb in a dry frying pan over medium heat until fully cooked and lightly crisped.
Divide the dough into 6 pieces and roll each into an oval flatbread.
Cook the flatbreads on a preheated baking stone or tray at 230C for 6-8 minutes until puffed and golden.
Spread the warm breads with the garlic-yogurt aubergine and top with the browned lamb.
