Chef's Menu Description

An authentic Indian specialty cooked with freshly ground roasted spices, caramelised onions, and aromatic herbs in the traditional style.

Ingredients

  • • 3 cups day-old cooked rice, grains separated
  • • 1/3 cup thick tamarind pulp
  • • 3 tbsp sesame (gingelly) oil
  • • 1 tsp mustard seeds
  • • 2 tbsp chana dal
  • • 2 tbsp peanuts
  • • 12 curry leaves
  • • 2 tbsp puliyodarai podi
  • • 1/2 tsp salt

Preparation Steps

1
Phase 1

Heat the sesame oil, crackle the mustard seeds, then fry the chana dal and peanuts until golden, and finish with the curry leaves.

2
Phase 2

Add the tamarind pulp, puliyodarai podi, and salt, and simmer until it reduces to a thick dark paste that leaves oil at the edges.

3
Phase 3

Let the paste cool slightly so the rice does not turn mushy.

4
Phase 4

Fold in the rice a few spoonfuls at a time until every grain is evenly coated.

5
Phase 5

Rest for 30 minutes for the flavours to soak in and serve at room temperature, railway-stall style.
