Hand-stretched artisan flatbread baked against the searing clay walls of the tandoor, brushed with golden butter and fresh herbs.
Knead the flour, semolina, oil, and salt with water into a firm, smooth dough and rest it for 15 minutes.
Divide the dough into small balls and roll each into a 3-inch circle without using dry flour.
Heat the oil in a kadhai until a small piece of dough rises to the top quickly.
Slide in one puri at a time and press gently with a slotted spoon so it puffs up, then flip and fry until golden.
Drain on paper and serve the puris hot with aloo bhaji or chana masala.
